Our Executive Chef since 2017, Jason has helped shape The Ebbitt Room into a best-in-class culinary destination, celebrated for its creativity and depth of flavor. Fresh from his yearly pilgrimage to Japan to work in some of the country’s most esteemed restaurants, Jason’s passion for Japanese cuisine runs deep. Last year, we debuted our first-ever Taste of Japan dinner, inspired by the traditions, techniques, and artistry Jason brought back with him. In 2026, we are proud to present Taste of Japan: Homecoming—a return to the roots of this now-beloved culinary series and a reflection of Jason’s continued journey.
